The Process

A close-up view of a yellow apple being sliced with a serrated knife on a wooden cutting board.

Passionate about simplicity and authentic pasta, John DiStazio studied the art and skill of handmade pasta with professional sfoglina, Simonetta Capotondo, in Ancona, Italy and is a certified pasta chef having trained at Accademia Italiana Chef in Florence Italy.

John grew up with traditional pasta made at home. With Impasto, he's bringing a dream to life — sharing his love for homemade authentic Italian food with families in the Pittsburgh area.

Using only the freshest ingredients, John makes his pasta by hand with time-honored traditional methods, bringing classic pasta — as it's made in Italy — to your table.
